Protein “Sugar” Cookie Sandwich

  • 1 1/4 cups Eat Me Guilt Free DIY Blondie mix
  • 1/2 cup cups xylitol
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 5 tablespoons ghee
  • Almond milk (enough to mix) In case you need it
  • 2 tsp natural sprinkles
  • 2 tsp sugar free dark chocolate chips
  • 1/2 cup greek yogurt
  • 2 tbs coconut flour


Step 1

Preheat oven to 370 F. Spray a cookie sheet with nonstick coconut oil.

Step 2

In a large bowl, beat the ghee and xylitol together until light and fluffy. Add vanilla extract, and beat until smooth.

Step 3

In a separate bowl combine all dry ingredients Eat Me Guilt Free DIY Blondie mix, coconut flour, and baking powder and salt.

Step 4

Add dry mixture to ghee mixture and mix until combine.

Step 5

Shape the dough into a log, and wrap in plastic wrap or parchment. Freeze for 20 minutes.

Step 6

Remove the cookie dough from the freezer and slice into equal slices. Place the cookie onto cookie sheet.

Step 7

Bake 8-9 minutes, or until lightly golden on the bottom. Remove and let cool completely.

Step 8

Scoop about 1 tablespoon of greek yogurt onto the bottom of half of the cookies, then top with the remaining cookies. Freeze 30 minutes before serving.

Step 9

Sprinkle with dark chocolate chips and natural sprinkles (optional)
