Protein Pumpkin Pie Bites

- 1/4 cup oat flour
- 1 cup almond or hazelnut flour
- 1 tbs coconut oil
- 1/4 tsp cinnamon
- 1/4 warm water
- 6 drops liquid stevia
- 2 cups greek yogurt
- 2 eatmeguiltfree PUMPKIN SPICE
- 1/2 cup xylitol
- 1 scoop eatmeguiltfree Vanilla Protein Powder
- 1 tsp cinnamon
- 1 cup Vegan Cream Cheese (or any cream cheese)
Preheat oven to 360 F. Spray a 9 x 13" baking pan with nonstick spray.
In a bowl In a small bowl, combine all dry ingredients for the crust and mix well. In another small bowl, combine the warm water and coconut oil, and beat well. Slowly add the oil and water mixture to the dry ingredients and stir until well combine. Press crust into the bottom of your pan and bake for 8 minutes.
Filling: Cut eatmeguiltfree PUMPKIN SPICE into small pieces. Set aside.
Blend greek yogurt, cream cheese, protein powder, xylitol and cinnamon. Add Pumpkin Spice brownie.
Gently, fold in pumpkin spice brownie with cheesecake mixture.
Pour mixture over crust and smooth out with a spatula.
Freeze until is solid enough to cut.
Remove from freezer and wait 10 minutes to cut.
Cut into bite-sized pieces. Drizzle dark chocolate on top (optional)
