- Protein Pancake:
- 1 scoop Eat Me Guilt Free Vanilla Protein powder
- 1/4 cup raw oats
- 1/4 cup cottage cheese
- 1 tbs ground flax seed + 3 tbs water ( = 1 egg)
- 1 tbs chia seed
- 3 tbs almond flour
- 2 Slices Vegan bacon from Morning Star ( you can use regular bacon)
- 1 cup cheddar almond cheese
- 2 slices avocado
Preheat pan over medium heat and lightly spray with coconut oil spray.
Mix flax seed with water and let set aside for 10 min.
Blend all the pancakes ingredients until a batter forms. Add flax egg and mix well.
Pour about a 2.5-inch wide puddle of batter. Delicately flip the pancake after about 35 seconds or when it browns.
Repeat process with remaining batter.
While your pancakes are cooking cook your vegan bacon (or regular bacon) as your prefer. You can broil them in the oven or use a cooking pan (DO NOT USE OIL)
Melt cheddar almond cheese in the oven.
Place bacon on top of one pancake.
Pour 1 tbs melted cheddar almond cheese over bacon, add avocado and pour remaining cheese.
Top the sandwich with the second Protein pancake.
