Protein Pancake Breakfast Sandwich

  • Protein Pancake:
  • 1 scoop Eat Me Guilt Free Vanilla Protein powder
  • 1/4 cup raw oats
  • 1/4 cup cottage cheese
  • 1 tbs ground flax seed + 3 tbs water ( = 1 egg)
  • 1 tbs chia seed
  • 3 tbs almond flour
  • Toppings:
  • 2 Slices Vegan bacon from Morning Star ( you can use regular bacon)
  • 1 cup cheddar almond cheese
  • 2 slices avocado



Step 1

Preheat pan over medium heat and lightly spray with coconut oil spray.

Step 2

Mix flax seed with water and let set aside for 10 min.

Step 3

Blend all the pancakes ingredients until a batter forms. Add flax egg and mix well.

Step 4

Pour about a 2.5-inch wide puddle of batter. Delicately flip the pancake after about 35 seconds or when it browns.

Step 5

Repeat process with remaining batter.

Step 6

While your pancakes are cooking cook your vegan bacon (or regular bacon) as your prefer. You can broil them in the oven or use a cooking pan (DO NOT USE OIL)

Step 7

Melt cheddar almond cheese in the oven.

Step 8

Place bacon on top of one pancake.

Step 9

Pour 1 tbs melted cheddar almond cheese over bacon, add avocado and pour remaining cheese.

Step 10

Top the sandwich with the second Protein pancake.

Step 11
