Protein Cookie Dough Ice Cream Sandwich

Ingredients

Cookies:
  • 1/2 cup almond meal
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 cups eatmeguiltfree DIY Blondie mix
  • 1/2 cup dark chocolate chips
  • 1/4 cup almond milk (or any milk)

Ice Cream:
  • 1 cup greek yogurt
  • 1/2 cup xylitol
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips

    Method

    Step 1

    Preheat oven to 360 F.

    Step 2

    In a bowl combine al dry ingredients together almond meal, DIY Blondie mix and baking powder.

    Step 3

    Add Vanilla extract and almond milk.

    Step 4

    Mix with a spatula until well combine.

    Step 5

    Add dark chocolate chips and carefully combine together.

    Step 6

    With a spoon place cookies on a baking sheet (make them as big as you want). Bake for 12 min.

    Step 7

    While your cookies are baking. In a bowl combine greek yogurt, xylitol and vanilla extract. Set aside.

    Step 8

    Remove cookies from oven and let cool completely. Once cool place ice cream on top of one cookie.

    Step 9

    Place another cookie on top of your ice cream.

    Step 10

    Cover Ice cream with dark chocolate chips.

    Step 11
