Protein Churro Ice Cream Sandwiches

Have you ever wonder how to make healthy Churros?  If you have I found you a solution! Instead of frying them just bake them! Not only are they are baked Churros, but they are HIGH IN PROTEIN, GLUTEN FREE & LOW CARB!!


  • 1 cup Eat Me Guilt Free DIY Blondie mix
  • 3 tbs buckwheat flour
  • 1/4 cup coconut flour
  • 1/8 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 cup water (enough to mix)
  • 1/4 cup coconut oil
  • cinnamon/xylitol mixture
  • Halo Top Sea Salt Caramel Ice Cream
  • 2 tbs xylitol


Step 1

Preheat oven to 370 F. Spray a cookie sheet with nonstick coconut oil.

Step 2

In a bowl combine all dry ingredients Eat Me Guilt Free DIY Blondie mix, buckwheat flour, coconut flour, and baking soda.

Step 3

Add water, coconut oil, and xylitol to medium sauce pan.

Step 4

Simmer over medium heat until coconut oil has completely melted and water is steaming.

Step 5

Right when water reaches its first boil, remove pan from heat and dump all of the dry mixture in at once.

Step 6

Stir rapidly with a wooden spoon to incorporate flour into wet mix. Let cool for about 5 minutes and add vanilla extract. Keep mixing with wooden spoon.

Step 7

Transfer mixture to a piping bag fitted with a star tip.

Step 8

Pipe snug spirals onto your cookie sheet. Bake for 10-12 minutes.

Step 9

Immediately dredge churros in cinnamon/xylitol mixture to completely cover. Let cool for 10 minutes.

Scoop Halo Top Sea Salt Caramel Ice Cream between.
