Protein Apple Stuffed Scones

  • Dough:
  • 1 cup Eat Me Guilt Free Blondie DIY Mix
  • 1 cup oat flour
  • 1/4 cup almond flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/4 cup xylitol (or stevia)
  • 1/2 cup almond milk (or any milk)
  • Filling:
  • 1 chopped | peeled apple
  • 1/2 cup peanut butter
  • 1 tsp coconut oil


Step 1

Preheat oven to 360 F.

Step 2

In a large bowl, whisk together the oat flour, baking soda, baking powder, almond flour, Eat Me Guilt Free Blondie DIY Mix and cinnamon.

Step 3

In a small bowl combine almond milk, vanilla extract and xylitol.

Step 4

Using a fork, stir the wet ingredients into the oat flour, working from the center out.

Step 5

Divide the dough in two.

Step 6

In a safe microwave bowl microwave coconut oil and peanut butter for 20 seconds.

Step 7

Stir until its all combine add apples. Set aside.

Step 8

Roll half the dough on piece of parchment to about 8 to 9 inches in diameter. Evenly spread apple mixture.

Step 9

On piece of parchment, roll the other half of the dough until it forms a circle just slightly larger than the first half, about 9 or 10 inches.

Step 10

Place the second layer on top of the first layer, pressing it down and gathering in the edges with your palms to tighten the edges and seal them together.

Step 11

Cut into 8 large wedges

Step 12

Bake for 15-20 minutes.

Step 13

Drizzle white chocolate on top (optional)
