Pineapple Cake with Chocolate and Strawberry
Chef Miami | Pineapple Cake with Chocolate and Strawberry
- 2 cups eatmeguiltfree DIY Blondie Mix
- 1 tsp Pineapple Extract
- 1/2 cup almond meal
- Almond milk (enough to mix)
- 1 cup slices strawberries
- 2 cups greek yogurt
- 2 tsp xylitol
- Chocolate Pool:
- 1 cup sugar free chocolate chips
- 1 cup melted dark chocolate
Preheat oven to 350 F. Spray a cake pan (the one with the tube in the middle) with coconut oil.
In a bowl mix eatmeguiltfree DIY Blondie Mix, almond meal.
Add almond milk and Pineapple Extract. Combine well.
Pour batter into the cake pan.
Bake for 15 min. Remove from oven and let cool completely.
Carefully cut cake in half.
In a bowl combine greek yogurt and xylitol. Spread mixture into one layer.
Top with second cake layer. Place sliced strawberries around greek yogurt.
In the middle of the cake pour melted dark chocolate follow by sugar free chocolate chips.
