Ingredients

  • Meringue Cookies:
  • 4 egg whites (room temperature)
  • 1 cup xylitol
  • Peanut butter:
  • 3 tbs eatmeguiltfree Peanut Butter Powder
  • 2 tbs water
  • 1/3 cup fresh raspberries

 

Method

Step 1

Preheat oven to 200 F. Spray a baking sheet with coconut oil.

Step 2

In a bowl, using an electric mixer, beat the egg whites until they are foamy.

Step 3

Add xylitol. Continue Whisking.

Step 4

Spoon meringue mixture on the parchment sheet and smooth the top of the meringue with back of the spoon.

Step 5

Bake for 90 minutes, until the outside shell become shift and the meringue has gone from shiny to matte.

Step 6

In a smal bowl mix together eatmeguiltfree Peanut Butter Powder and water.

Step 7

Place a scoop of peanut butter of top of one meringue. Please raspberries on top of the peanut butter.

Step 8

Top with a meringue cookie to make a sandwich.
