CORNBREAD TACO CASSEROLE

Chef Miami I Cornbread Taco Casserole

Ingredients:

  • 4 eatmeguiltfree cornbread
  • 1 pound ground vegan beef (you can use regular beef)
  • 1 cup chopped onion
  • 3/4 cup tomato sauce
  • 1/4 cup water
  • 1 cup whole kernel corn
  • 1 cup almond cheese
  • 1 tsp thyme
  • salt and pepper

Method:

Step 1:

Preheat oven to 350 degrees F. Spray a small casserole with coconut oil.

Step 2:

Cook vegan beef and onion until beef is browned; drain. Stir in tomato sauce, corn and water. Cook on low heat for about 7 minutes.

Step 3:

Cut eatmeguiltfree Cornbread into ½-inch cubes. Mix with cheese. 

Step 4:

Spoon vegan beef into casserole. Evenly spread cornbread mixture on top of the vegan mixture. 

Step 5: 

Bake for 20 mins or until golden brown.
