Protein Strawberry Shortcake

- 1 cup coconut Flour
- 1/4 cup eatmeguiltfree DIY Blondie Mix
- 1 tsp baking powder
- 2 eggs
- Almond Milk or water (enough to mix)
- 2 tbs greek yogurt
- 1/2 cup sliced strawberries
- 1/2 cup greek yogurt
- 1 scoop vanilla protein powder
Preheat oven to 360 F. Spray a loaf pan with nonstick spray.
In a bowl combine all dry ingredients. Add greek yogurt. Set aside.
In a small bowl whisk eggs and add to the dry mixture. Slowly add almond milk. Mix well until smooth.
Pour into the loaf pan and bake for 25 minutes.
While shortcake is in the oven prepare the greek yogurt mixture.
In a bowl mix all ingredients.
Remove from oven and let cool before cutting.
Cut shortcake into squares. Spread 2 tsp of greek yogurt mixture on top of one layer. Place a second layer of shortcake on top and repeat the process one more time.
