Overnight Blueberry Protein French Toast the best way to start your day! High in protein and low carb.
- 2 eatmeguiltfree Blondies, cut into cubes
- 1/2 cup veggie cream cheese
- 1 cup blueberries
- 3 egg whites
- splash almond milk
- 1 tsp vanilla extract
- Blueberry Sauce (optional):
- 3/4 cup blueberries
- 1/2 cup xylitol
- 1/2 cup water
Spray a baking dish with nonstick coconut oil.
Arrange half the eatmeguiltfree Blondie cubes in the dish, and top with veggie cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining cubes.
In a bowl mix almond milk, egg whites and vanilla extract. Pour over eatmeguiltfree Blondie cubes.
Cover and refrigerate overnight.
Remove from refrigerator 20 minutes before baking. Preheat oven to 320 F.
Bake for 25 min or until golden brown.
In a sauce pan combine water and xylitol. Bring to boil, reduce heat to low-medium an slowly add blueberries.
Simmer for 10 minutes or until blueberries burst. Pour Blueberry Sauce over the baked french toast.
