Raspberry Oatmeal Cake

  • 2 cups eatmeguiltfree DIY Blondie Mix
  • 1/4 cup almond flour
  • 3 egg whites
  • 1 egg
  • almond milk ( enough to mix)
  • 1 cup rolled oats
  • 1 cup raspberry
  • 1/4 chopped pecans



Step 1

Preheat oven to 370 F. Spray a loaf pan with nonstick spray.

Step 2

In a bowl combine almond flour and 2 cups eatmeguiltfree DIY Blondie Mix

Step 3

Add eggs and milk. Stir until well combine.

Step 4

Bake for 10 minutes.

Step 5

While the cake is in the oven. In a sauce pan place raspberries and xylitol. Bring to boil and stir for about 9 minutes. Sieve to remove the seeds. Set Aside

Step 6

In a bowl mix raspberry sauce, pecans and rolled oats. Remove cake from the oven.

Step 7

Sprinkle the crumb mixture over the top, and lightly press it.

Step 8

Bake for 20 minutes, or until lightly browned
