Upside Down Cupcakes by Chef Miami

Ingredients

  • 1 cup Puffed rice
  • 1/2 cup melted dark chocolate
  • 1/4 cup melted white chocolate
  • 1 cup eatmeguiltfree Brownie DIY mix
  • 1 tsp Baking Powder
  • 1/2 cup Almond Milk
  • 1 tsp coconut Oil

    Method

    Step 1

    Preheat oven to 360 F. Line cupcakes tins with 12 cupcake liners.

    Step 2

    In a bowl combine together puffed rice, melted dark chocolate and half of melted white chocolate.

    Step 3

    Fill each cupcake cups with 1 tbs chocolate puffed rice. Press down with your hands or a spoon.

    Step 4

    In a medium bowl beat until smooth eatmeguiltfree Brownie DIY mix, baking powder, almond milk and coconut oil.

    Step 5

    Pour brownie mix on top of the puffed rice just over half full (do not overfill!). Bake for 10 to 12 minutes.

    Step 6

    Allow to cool for 5 minutes in the pan, and then remove the cupcakes and allow to cool completely.

    Step 7

    Drizzle remaining melted white chocolate on every cupcake.
