Coconut Ice Cream Sandwich by Chef Miami

Healthy Coconut Ice Cream Sandwich?? Yes, there’s a way to eat your favorite treats the healthy way. The best of this recipe? It is High in protein, low carb and guilty free!


  • 2 cups eatmeguiltfree Brownie DIY mix
  • 5 egg whites
  • Splash almond milk
  • 2 1/2 cups greek yogurt
  • 1 cup nuts-n-more coconut peanut butter (room temperature)
  • 1 scoop nuts-n-more Vanilla Whey Protein



Step 1

Preheat oven to 370 F. Spray 2 baking sheets (same size) with Coconut nonstick spray.

Step 2

In a bowl mix eatmeguiltfree Brownie DIY mix, egg whites and almond milk. Whisk until well mix.

Step 3

Pour half batter into one baking sheet. Pour the other half into the second baking sheet.

Step 4

Bake for 8-10 minutes. Let cool before cutting.

Step 5

In a bowl combine greek yogurt, nuts-n-more Vanilla Whey Protein and nuts-n-more coconut peanut butter

Step 6

Evenly spread the Coconut Ice cream on top of one brownie layer. Place the other layer on top of the Ice cream.

Step 7

Wrap in plastic wrap. Freeze on a baking sheet overnight.

Step 8

Before serving cut into mini rectangles.
