Chef Miami | Volcano Brownie Cups

Ingredients

  • 1 cup eatmeguiltfree DIY Brownie Mix
  • 2 egg whites
  • 1/2 cup greek yogurt
  • splash of almond milk
  • 1/2 cup chefmiami Protein Marshmallows (optional)
  • 1 egg
  • 3 tbs xylitol (optional)

Method

Step 1

Preheat oven to 350 F. Line a mini muffin pan with cupcake liners.

Step 2

In a bowl combine eatmeguiltfree DIY Brownie Mix, eggs, xylitol & almond milk.

Step 3

Pour about 2/3 of the batter to prepared mini muffin pan, spreading evenly.

Step 4

Place 1 tbs greek yogurt on top of each cupcake.

Step 5

Top with remaining cupcake batter, covering the greek yogurt entirely.

Step 6

Bake for 20 min. Remove from oven and let cool.

Step 7

Flip cupcakes upside down and place protein marshmallows on top.

Step 8

Drizzle with melted dark chocolate (optional)
