Our Tex-Mex Tortilla Salad is the answer! This salad takes less than 20 minutes to prepare, making it the perfect weeknight dinner or meal prep recipe! Made with lettuce and topped with black beans, corn, pico de gallo, avocado and homemade protein tortilla strips. Not only is this salad delicious it's also high protein, low carb, vegetarian and vegan! Yum!
Ingredients
- EMGF Protein Tortillas
- Avocado oil
- Sea salt
- Lettuce
- Black beans
- Corn
- Pico de gallo
- Avocado
- Lime
Recipe
Tortilla Strips
- Cut tortilla into strips
- Spray with avocado oil
- Sprinkle with sea salt
- Air fryer for 6 minutes on 375° flipping halfway
- Let cool completely
Salad
- Add fresh lettuce to your bowl
- Add black beans, corn and pico de gallo
- Slice an avocado and add to the salad
- Top with the cooled tortilla strips
- Add lime and salt as desired
