Red, White and Blue Ice Cream Cake

To celebrate National Ice Cream Cake Day yesterday, we made the perfect patriotic treat for the 4th of July! This festive red, white and blue ice cream cake is easy to make, requires no baking and is packed with protein!

What you'll need

- 6 Eat Me Guilt Free brownies or blondies of your choice

- 2 16oz tubs of vanilla ice cream

- 16oz of vanilla frosting

- Red and blue food coloring

- Red and blue sprinkles

- 8" foil cake pan

 

What to do

  1. Let the ice cream sit out to soften
  2. In a medium mixing bowl add the blondies and 1/3 cup of frosting, mix together until smooth and thoroughly combined
  3. Pour mixture in the cake pan and pat down until firm
  4. Add the softened ice cream on top, spread evenly and smooth
  5. Freeze for at least 2 hours
  6. In the meantime evenly distribute the remaining frosting into 3 bowls adding red and blue food coloring to 2
  7. Line the red, blue and white in a piping bag, remove frozen cake from freezer and adding frosting along the rim
  8. Finally decorate with red and blue sprinkles, and serve!
