What you'll need
- 12.2oz can of sweetened condensed coconut milk
- 12.2oz can of evaporated coconut milk
- 1/4 cup chopped mint (extra to garnish)
- 1 lime
- 1 shot of white rum
- 1 Squeeze the Day Blondie
What to do
- Add the can of sweetened condensed coconut milk to a large mixing bowl
- Using a hand mixer, blend the coconut milk for about 2 minutes until creamy and thick
- Squeeze the juice of 1 lime into the coconut milk, add the chopped mint, shot of white rum and can of evaporated coconut milk
- Mix until thoroughly combined, then pour into a foil pan and freeze for at least 8 hours
- Once frozen serve with our Squeeze the Day Lemon Blondie and garnish with fresh mint
