Yup, these protein-packed and totally instagramable matcha cheesecake bites are the ultimate self-care snack! Made with our matcha powder infused January Flavor of the Month, Love You So Matcha, these sweets are loaded with antioxidants which means glowing skin and more energy - yayay!
2 tbsp softened coconut oil
1 cup heavy cream
1 cup cream cheese
1/3 cup monk fruit sugar
2. Using a head mixer, mix heavy cream for about 2 minutes or until it becomes whipped
3. Combine cream cheese and icing sugar then whisk together
4. Mix the whipped cream and cream cheese mixture
5. Line a cupcake pan with foils then firmly pat down the crumbled blondies in each (about 2 tbs each)
6. Then top each evenly with the cheesecake mixture
7. Freeze for 30 minutes until cheesecake is firm
8. Decorate with coconut flakes and raspberries and voila!
