Baked French Protein Toast

Baked French Protein Toast

Makes 5-6 servings

What you'll need

  • 1 loaf of @eatmeguiltfree protein sliced bread 
  • 2 1/2 cups non-dairy milk like almond or cashew
  • 2 tbsp of melted coconut oil or vegan butter
  • 1/3 cup coconut or brown sugar
  • 3 Tbsp of cornstarch 
  • 1 Tbsp ground flax seed
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • Fresh berries, dairy free whip cream, maple syrup for topping

 

What you'll need

  1. Whisk together the custard ingredients and set aside for 15 minutes.
  2. In the meantime, lay the toasts on the oiled baking dish 7 X 11 or large pie dish.
  3. Evenly pour the custard over the bread and set aside for about 10 minutes.
  4. Bake uncovered at 350ºF for 40-50 minutes. Remove the casserole from the oven and allow it to cool for 10 minutes before serving.
  5. Dust with optional powdered sugar and serve with maple syrup.
