
Makes 5-6 servings
What you'll need
- 1 loaf of @eatmeguiltfree protein sliced bread
- 2 1/2 cups non-dairy milk like almond or cashew
- 2 tbsp of melted coconut oil or vegan butter
- 1/3 cup coconut or brown sugar
- 3 Tbsp of cornstarch
- 1 Tbsp ground flax seed
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- 1/2 tsp salt
- Fresh berries, dairy free whip cream, maple syrup for topping
What you'll need
- Whisk together the custard ingredients and set aside for 15 minutes.
- In the meantime, lay the toasts on the oiled baking dish 7 X 11 or large pie dish.
- Evenly pour the custard over the bread and set aside for about 10 minutes.
- Bake uncovered at 350ºF for 40-50 minutes. Remove the casserole from the oven and allow it to cool for 10 minutes before serving.
- Dust with optional powdered sugar and serve with maple syrup.
