Craving apple pie but laking the baking skills? 'cause SAME. This fall weather had us craving the classic apple dessert but not all the effort. So we got a little adventurous and made Apple Pie Taquitos aka apple pie filling rolled up in our protein tortilla and coated with cinnamon sugar *drool*  These protein-packed treats are sure to satisfy your Fall sweet tooth without spending hours in the kitchen!

P.S. these low-key taste just like McDonald's apple pie 

What you’ll need

For the filling

  • 3 medium gala apples
  • 1/4 cup sugar
  • 2 tbsp coconut oil
  • Cinnamon
  • 1/4 cup water

To assemble


What you'll do

1. Dice the apples into small squares and add to a pan
2. Add in the coconut oil and cinnamon then cook on medium heat, adding in the water once the sugar has dissolved
3. Cook for 15 minutes, stirring frequently until apples are soft
4. Remove from heat, set aside, and preheat the oven to 350° F
5. Add even portions of the apple filling to the center of each tortilla
6. Roll up the tortillas tightly and place them side by side on a baking sheet lined with parchment paper
7. Heat up coconut oil, sugar, and a dash of cinnamon in the microwave for 15 seconds until liquid
8. Thoroughly spread the mixture on top of the tortillas
9. Cook in the oven for 10-15 minutes until the tortillas appear golden and crisp
10. Allow the Apple Pie Taquitos to cool for several minutes then serve and top with caramel drizzle!
